MEXICAN TORTILLA PIZZA
SERVINGS: 4 | PREP TIME: 5 min. | COOK TIME: 10 min.
Directions
- Preheat the oven to 350°F.
- Place the tortillas on a flat dish and spread 1 Tbsp salsa on each tortilla. Divide the cheese evenly among the tortillas.
- Transfer the tortilla to the baking sheet and bake for 17 minutes until the cheese melts and bubbles.
- Take the tortilla pizzas out of the oven and top each tortilla with 1 Tbsp guacamole.
- Serve immediately.

This is a wonderful collection of recipes, they quick and easy to follow. Great way to start your cooking experience. Delicious looking pictures.
I received a free copy of this book via Booksprout and am voluntarily leaving a review.
The recipes had issues as well. Every recipe has a photo, but clearly, not each photo goes with the recipe it is supposed to. One recipe calls for thinly sliced ham, but the photo shows ham in thick rectangles. The most egregious photo “error,” I think, is the one that goes with the Mexican Tortilla Pizza recipe. The ingredients and techniques are simple, but what is seen in the photo does not reflect the actual ingredients or the directions given. The photo shows stacked full-round tortilla layers with something in between with chopped tomato, salsa, green onions, cheese (melted and uncooked), and other items I can't quite determine on top (maybe red bell pepper strips?); the directions have you use the tortillas singly, not one on top of another. The ingredients list is simply tortillas, mild salsa, guacamole (which I cannot see in the photo), Mexican blend cheese, and red onion (again, no evidence of this in the photo). Because of this cookbook's many issues, I cannot recommend it in the slightest.
